Slowing Down Cilantro

I have always used dried cilantro in my rubs sauces and other recipes. Boy did I get an awakening when I tried fresh from the garden cilantro. A few sprigs of fresh cilantro and some New Mexico chiles and a border feast is on the top of the menu.

However cilantro is very fast to flower. It is difficult keeping the blooms off. So I am going to sow a succession crop of cilantro every few weeks just to have enough fresh leaves around while the flowers dry and turn into another favorite spice......coriander
